Food brings back memories. When I posted online the picture of Cola Chicken that I had cooked for the first time in Hong Kong, messages from my friends included “You serious?” or “NO WAY!” That reminded me of the first time my mom mentioned she would cook Cola Chicken for me during my primary school years. I also wondered, “You can cook with Cola?!” From then on, Cola Chicken and its sweet taste has been my favorite.

Cooking Cola Chicken in Morningside is not only a great choice when you just don’t want to repeatedly eat in canteens, but also an easy way to surprise your friends who have never heard of using Cola to cook. During this special time with the coronavirus, we also have plenty of time to try something new and fun to escape from the boredom of confinement. So why not give Cola Chicken a try?

This dish is super easy to cook. Extremely unexperienced as I am, I can just search for the recipe of Cola Chicken online and produce a meal worth tasting. We just have to prepare several ingredients:

  1. A bottle/can of Cola
  2. 8-10 chicken wings
  3. Ginger, scallion, garlic
  4. Cooking oil
  5. Light soy sauce, dark soy sauce (some recipes do not require both)
  6. Salt

And in the video, I have followed these steps to get my lunch done:

  1. Boil some water.
  2. While waiting for the water to boil, prepare the other ingredients. Wash and score the Chicken wings one or two times on each side (better for absorbing the soup). Chop ginger, scallion, and garlic into small pieces.
  3. Put the prepared chicken wings in boiling water for 10-20 seconds and then remove  (or you can also marinate the chicken wings in cooking wine for 10-20 minutes). Discard the water.
  4. Add oil to the pan and fry the chicken wings on each side until  golden, then add prepared ginger, garlic, and scallion and continue to fry for a short time.
  5. Add Cola (The amount depends on the desired sweetness).
  6. Add 3 tablespoons of light soy sauce and 1 tablespoon of dark soy sauce.
  7. Add a pinch of salt.
  8. Turn down the heat and simmer covered for 15-20 minutes.
  9. Turn to high heat and cook for 3-5 minutes. Some liquid should evaporate and sauce will coat the wings.
  10. Enjoy your meal!!
